Pork Belly Burnt Ends
(Serves 4-6)


3-4 lbs pork belly

1 cup favorite BBQ sauce


NOTES: Many times I have used Sweet Baby Rays BBQ sauce. I like to use cherry wood for smoking, but any wood will work like mesquite, pecan, hickory etc.
 

Remove the skin and reserve for another purpose (Chicharrones perhaps) if your pork belly came with skin on. Cut the belly into 1-1.5 inch squares and smoke at 275°F. for about 4 hours.

Remove from the smoker and coat them in BBQ sauce, add them back to the smoker for another hour.

Serve!
