Banana Butter Cream Frosting
(Makes enough for 1 medium three layer cake)


¾ cup ripe banana, mashed (about 1½ ripe bananas)
2 tblsp Passion Fruit Juice
½ cup Whipping Cream
½ cup plus 2 tblsp Fine White Sugar
2½ cups Unsalted Butter, Softened at room temperature


NOTES: You can substitute lemon or orange juice for the passion fruit juice.
 

Blend the first four ingredients, then put over medium heat until it simmers, remove from heat stirring. Let it cool.

To the softened butter, add the cooled banana cream.

Whip until creamy.
