Granola
Granola
(Makes 4 Cups)


3 cups oats
1/3 cup vegetable oil
2/3 cup honey
½ cup pecans
½ cup almonds
1 tsp cinnamon
1 tsp vanilla


NOTES: If you toast the granola to a very dark brown without burning it, you will achieve mock chocolate flavor! I was shocked the first time this happened because I thought I burned it all, but after a day I tried it agian and yup, chocolatey!
 

Pre-heat the oven to 300°
Mix everything together and spread out evenly onto a sheet pan, use two sheet pans for a slightly quicker finish time. (I did not yse any parchment paper or tinfoil).
After 10 minutes turn/mix and toss the granola and keep repeating every ten minutes until the granola is dry. My oven runs a tad hot, so after 40 minutes I turned down the oven to 265° F. After 1 hour and ten minutes, I gave it a final turn, turned off the oven and left it in the oven for almost an hour to finish the drying out process. Double check that your not burning the granola after 20- minutess.

Now some of the granola is stuck together, using a spatula dislodge the granola and let cool to room temperature before sealing in an airtight container for storage outside of the refrigerator.
