Chocolate Fudge

2 cups semi-sweet chocolate chips
1 (14 oz) can of sweetened and condensed milk
1 tsp vanilla
NOTES: To store your fudge, wrap individual pieces in wax/parchment paper or plastic wrap and store in an air tight container. 2 weeks at room temperature, 4 weeks in the fridge, 6 months in the freezer. (yeah, like it's going to last that long!
Line a 9" x 9" baking dish with parchment paper (or plastic wrap or tinfoil)
Melt the chips in a double boiler, once melted stir in the condensed milk, then fold in the vanilla extract.
Using a rubber spatula scrape the fudge into the baking dish and place in the refrigerator for an hour or longer.
Cut into 1" x 1" squares.
