Duck Sausage Spice
Duck Sausage Spice
(Mix with a half pound ground meat)


½ tsp thyme
¾ tsp sage
¼ tsp rosemary
½ tsp black pepper
¾ tsp orange zest
1 tsp maple syrup (or honey)
1 tsp port wine, optional
¾ tsp smoked paprika
1 tsp worchestershire sauce
½ tsp mushroom bouillon or mushroom powder or anchovy paste


NOTES: Better Than Bouillon has a great mushroom base which I used. I made this spice mixture to use with ground beef because I only had ground beef and wanted a duck sausage... so the legend goes!
 

Mix with ⅓ pound ground beef... or try it with ground chicken, or ground turkey oh and don't forget ground duck :-)
