
(Serves 6)
1 tbsp oil (coconut oil or vegetable oil)
1 medium onion, finely chopped or 1/3 cup fried onions
1 tsp garlic powder
1 tsp powdered ginger
1 tsp cumin seeds
1 tsp turmeric powder
1 tsp ground coriander
½ tsp chili powder (adjust to your spice preference)
½ tsp garam masala
1-2 tbsp tomato paste (for richness and depth)
1 can (14 oz) coconut milk or coconut cream
2 cups frozen peas (thawed or straight from frozen)
Salt to taste
Fresh cilantro for garnish (optional)
Add the oil to a medium sauce pan over medium low heat. Add the onions, if raw and chopped saute them for a few minutes until they are translucent, if they are the dried fried variety toss them in and proceed to the next step.
Add the rest of the spice ingredients and tomato paste, stir for a few minutes then add the coconut milk. stir until well blended and warmed through.
Now add the peas, bring the mixture up to temperature and taste. Add any salt at this point. You can also adjust the spice level at this stage.
Server alone or over rice or use some naan bread to dip!
