Roasted Cauliflower

1 large head of cauliflower
Olive oil (veg. oil is fine)

NOTES: 2.5 carbs! I was never a lover of this vegetable before this recipe!
Pre-heat oven to 350 degrees. Remove leaves and cut stem flush with the florets. Slice in 1/4 inch slices (from head to stem). Place cut side down onto an oiled cookie sheet. Brush or drizzle oil on top of the cauliflower and salt them all. Place in oven for 20 minutes.
If using a slightly thicker cut, you may want to flip them over at 20 minutes and continue roasting till the stem portion is soft. Remove and eat immediately!
