(Serves 8-12)
12oz fresh cranberries, rinsed
1 orange
2 apples, granny smith, peeled, seeded and cut into small chunks/cubes
1 cup fresh or frozen blue berries
½ cup brown sugar
½ cup water
¼ tsp cinnamon
¼ tsp nutmeg powder
¼ tsp clove powder
¼ tsp ginger powder
Mix the 4 spices together. Set aside. We will only use 1 ¼ tsp from this mix.
Zest the lemons and orange, set the zest aside, now cut off the top and bottom then cut all the outside skin and white pith off, then cut small segments from the orange by cutting between the membrane.
Now do the same to the lemons (and because the amount of seeds are greater in some lemons your segments will be very small). Squeeze the remaining juice from the orange and lemon cores in a medium sauce pan.
Add the water to the small amount of juice and mix in the sugar, add the cranberries and bring to a boil.
Once boiling, reduce to a simmer for 4 minutes, in this time you can hear the cranberries cracking.
Now add the apple chunks,and blueberries and ¼ tsp of the spice mix. Stir occasionally.
After 15-18 minutes reduce heat to low for the last few minutes. Total cooking time 20 minutes.
Let cool, put into an air-tight container and then inside the refrigerator. Enjoy!
