Watermelon Pear Dipping Sauce
(Makes 4 servings)

2 tblsp Pear Preserves or Jelly/Jam
1 cup Watermelon
¼ cup Sugar, fine white
½ cup Water
1 tsp Chili Garlic Sauce (Sambal Oelek)

NOTES: I happened to have pear preserve leftover in my fridge and was wondering how to use this 25+ lb watermelon when I came up with this recipe. Great dipping sauce for Spring Rolls or Egg Rolls!

Remove the rind and all the seeds from a cup of diced ripe watermelon, set aside.

Bring to a boil the water and suger and reduce to a simmer for about 4 minutes. Cool the simple syrup in the freezer for 5 minutes.

Using a blender, liquify the watermelon. Then push the watermelon through a strainer pressing the juices through and throwing away the pulp. Now add the simple syrup to the watermelon juice, taste it before you add all the syrup, you want it to taste like a delicious watermelon drink not a sugar rush!

Now combine the pear preserves with the Chili Garlic Sauce and stir in 1 tblsp of the watermelon elixer, stir well. Taste adjust seasonings if necessary.

Serve on the side as a dipping sauce with Spring Rolls, Egg Rolls or Chicken fingers.
