Southwestern Tortellini Salad
Salad
tortellini, 3 cheese, 20 oz., boiled, drained and cooled
1 cup corn nibblets
1 24oz can of blackbeans, rinsed
1 red bell pepper, roasted, chopped
1 avocado, chopped
1½ cups cherry tomatoes, halved
¼ cup red onion, chopped
¼ cup cilantro, minnced
Dressing
3 tblsp olive oil
2 limes, juice
2 tblsp rice wine vinegar
1 tsp sugar
1 tsp chili powder
1 tsp cumin powder
Salt and Pepper to taste

Dressing

NOTES:
Mix all the salad ingredients together in a large bowl.
In a smaller seperate bowl mix all the dressing ingredients, whisk together.
Now pour the dressing over the salad and mix well. Serve room temperature.
